Pavlišovský schnitzel, Kramfleky, Oukrop, Dobrošovské medallions
Pavlišovský řízek (Pavlišovský schnitzel)
Their name is taken from the village of Pavlišov which is not far from Náchod. It is a classic fried schnitzel with bread dumplings and sauerkraut. You will also find them on the menu around Úpice under the name Úpický schnitzel. This specialty can be commonly found in restaurants.
4 slices of pork (leg joint or neck), bread dumplings, sauerkraut, breadcrumbs, plain flour, eggs, salt
Cut, tenderize and season the pork, wrap in tinfoil and fry in hot fat or oil. It is served with sauerkraut and bread dumplings.
Kramfleky
This is what potato pancakes are called these days in particular in the area of Náchod.
800 g potatoes, 120 g whole meal flour, 1 egg, salt, frying oil
Peal and grate the raw potatoes, squeeze the excess water from them and place them in a bowl. Add the milk, egg, whole meal flour, salt, garlic, marjoram, and pepper and kneed the dough as for a potato pancake. According to taste add ground garlic and marjoram. Heat the fat and fry the individual portions of “kramfleky” in a frying pan until golden brown. They can be served with cheese and ground garlic.
Oukrop
A very quick and tasty garlic soup. It is popular in a number of ways. Be inspired by our recipe.
300 g potatoes, 5 to 7 cloves of garlic, 40 g lard, salt, ground pepper, soup spices, 1 1/4 l water
Cut peeled potatoes in cubes and boil in salted water until soft. Add the crushed garlic with salt, pepper, lard and season with soup spices. You may want to prepare the soup without potatoes with fried bread and season with marjoram, parsley or chives.
Dobrošovské medailonky (Dobrošovské medallions)
This recipe is from Dobrošov – a village not far from Náchod. After visiting Dobrošovský fortifications and leaving the Jirásek cabin observation tower, it can be ordered in the local restaurant.200 g boneless pork, 200 g chicken breast, 200 g sirloin of beef, salt, barbeque spices, steak seasoning, vegeta, 100 g smoky bacon, 4 garlic cloves, 1 large onion, oil
Cut each type of meat into four slices of the same size, tenderize and season them with salt and sprinkle a different type of spice on each individual type of meat. Then roast the meat until tender and remove. Sauté the pieces and bacon in the gravy, add thin slices of garlic, onion and sauté until the onion becomes transparent. For each portion serve one slice of each type of meat, cover with sautéed onion and garlic. Potatoes prepared in various ways can be served as a side dish.
